I beat him pretty easily solo using my Str/Fth build, and the Lothric Knight Greatsword. I think (don't quote me on this) that he's weak to thrust attacks as well as Lightning, so the Lothric Knight UGS is perfect, because its two-handed R2 is a long-reaching thrust. Not to mention you can buff it with lightning blade on top of the innate.
